GINGER RASAM

GINGER RASAM 

Taking this rasam gives immediate relief from cold. To retain the ginger flavour I have not added asafoetida, garlic and/or tomato making it more of a herbal medicinal rasam. You may add them if u want to.


INGREDIENTS :

Ginger juice
2 tbsp
Pepper
½ tbsp
Cumin seeds
1 tsp
Coriander seeds
1 tsp
Red chili
4
Tamarind paste
2 tsp
Water
1 ½ cup
Salt
To taste
Oil
1 tsp
Mustard seeds
1 tsp
Curry leaf
Coriander leaf
8 – 10
To garnish

METHOD :

·         Dry roast pepper, cumin seeds, coriander seeds and red chili (2). Cool it and grind to a fine powder.
·         To ginger extract add the dry roasted powder, tamarind extract, salt and water. Check for taste.
·         Heat oil in a kadai and temper with mustard seeds, curry leaf and remaining 2 red chilies.
·         Pour the rasam mix and keep in low flame.
·         Wait until it gets frothy. Switch off once it starts to boil.
·         Garnish with coriander leaves.

NOTE :

Boiling for too long will result in a bitter flavour and the medicinal quality of the rasam will be lost.  For best results keep in slow flame and cook. Though it takes time its worth its benefits. This goes for any kind of rasam.
